BLUEBERRY OATMEAL MUFFINS

Ingredients:


1 1/3 cups Multi Grain Hot Cereal by Country Choice
1/3 cup(s) whole wheat flour
1 1/2 cup(s) blueberries
1 serving(s) Fat Free Coffee Creamer (non-dairy powder)
1 tbsp arrowroot powder
1 pkg (instant) Trader Joe's Oatmeal Complete Maple & brown sugar
1 cup water
1 tbsp ground cinnamon
1 tbsp baking powder
3 spoonfulls of Kal Stevia Extract Powder (tiny spoon came with it)
1/2 tsp table salt


Instructions:

Preheat oven to 350 - 375. Mix all ingredients and spoon into 5 large muffin tins. Bake until top is lightly brown.

Let them cool a bit before removing from muffin tins as these are quite heavy with fruit.

These are so good and filling (but best of all really low points)

Deb's Low Fat Vegetarian Shepherd's Pie

Ingredients

3 1/2 cup(s) Morningstar Farms Frozen Burger Style Recipe Crumbles
4 serving(s) Hain Vegan Brown Gravy
1/2 cup(s) red onion(s)
1/2 cup(s) frozen corn kernels
1/2 cup(s) frozen peas
1 serving(s) 4.5 servings (1/3 cup each) of instant mashed potatoes
8 oz Health Valley Fat-free vegetable broth
3 oz Follow Your Heart Cheddar flavor Vegan gourmet cheese alternative


Instructions

Heat crumbles, diced red onions, corn, and frozen peas until heated through. Add gravy mix with water and heat again until it starts to thicken.

Put into glass baking dish, top with instant mashed potatoes and the cubed cheese and bake at 375 until it browns a bit on top.

This is really so good and low in points.


This is our dear doggie Cosmo who will be 2 years old on August 13, 2009.

He is both precocious and sweet at the same time. I was weeding this last Saturday and he decided I needed some help, LOL
